Infused with actual truffle pieces and truffle oil, Sottocenere cheese is, according to the experts over at The Kitchn, “mushroomy, slightly smokey and sweet, and earthy.” Made from raw cow’s milk that’s been aged 3 to 4 months, Sottocenere is rubbed with spices such as cinnamon, cloves, licorice and nutmeg.
